Do some subs (for car) need a ground/earth connection before they will turn on?

Yes the ground wire is necessary for power because it acts as the second side of the power cable. Think of it as a battery, you connect the power wire to one side of the battery and the ground wire is used to as the negative side of the connection. Connect it and you should be good :)
